Green Beans with Tomato Sauce



A simple but incredibly delicious dish, packed with plant-based protein — the best kind for us!
You can enjoy it as is or mix it with rice for a perfect, satisfying meal.


Ingredients

  • 2 cups green beans, ends trimmed
  • 4–5 ripe tomatoes, cubed
  • ½ onion, finely chopped
  • 1 garlic clove, finely chopped
  • Optional: 5–6 fresh basil leaves, chopped (or dried basil)
  • Salt, to taste
  • 1 tbsp olive oil
  • Filtered water (to cover)

Instructions

  1. In a wide pot, sauté the onion and garlic in olive oil until soft and fragrant.
  2. Add the tomatoes and cook for about 5 minutes.
  3. Add salt and basil, and mix well.
  4. Add the green beans, mix gently, and pour in enough filtered water to cover.
  5. Bring to a boil, then lower the heat and cook covered until the beans are soft and fully cooked.
  • If you prefer less sauce, cook half-covered.

This dish tastes amazing with rice — here’s a wonderfully simple recipe:

Perfect White Basmati Rice

Ingredients

  • 2 cups white basmati rice
  • 3 cups filtered water
  • Salt, to taste
  • Optional:
  • 1 tbsp turmeric (for yellow rice)
  • or 1 tbsp cumin seeds
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot.
  2. Add the rice, salt, and either turmeric, cumin seeds, or nothing for plain rice. Mix well.
  3. Add the water and cover the pot. Bring to a boil.
  4. Lower the heat and cook half-covered until all the water is absorbed.
  5. Turn off the heat, cover fully, and let rest for 5 minutes.

And that’s it — one of the best rice dishes in the world!
