Green Beans with Tomato Sauce

A simple but incredibly delicious dish, packed with plant-based protein — the best kind for us!
You can enjoy it as is or mix it with rice for a perfect, satisfying meal.
Ingredients
- 2 cups green beans, ends trimmed
- 4–5 ripe tomatoes, cubed
- ½ onion, finely chopped
- 1 garlic clove, finely chopped
- Optional: 5–6 fresh basil leaves, chopped (or dried basil)
- Salt, to taste
- 1 tbsp olive oil
- Filtered water (to cover)
Instructions
- In a wide pot, sauté the onion and garlic in olive oil until soft and fragrant.
- Add the tomatoes and cook for about 5 minutes.
- Add salt and basil, and mix well.
- Add the green beans, mix gently, and pour in enough filtered water to cover.
- Bring to a boil, then lower the heat and cook covered until the beans are soft and fully cooked.
- If you prefer less sauce, cook half-covered.

Perfect White Basmati Rice
Ingredients
- 2 cups white basmati rice
- 3 cups filtered water
- Salt, to taste
- Optional:
- 1 tbsp turmeric (for yellow rice)
- or 1 tbsp cumin seeds
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot.
- Add the rice, salt, and either turmeric, cumin seeds, or nothing for plain rice. Mix well.
- Add the water and cover the pot. Bring to a boil.
- Lower the heat and cook half-covered until all the water is absorbed.
- Turn off the heat, cover fully, and let rest for 5 minutes.
