Super Healthy Salad (It's NOT cheese!)

This salad comes in two versions: the basic, which is already delicious, or the full version with extra yummy additions.
Either way, it’s super healthy, fresh, and packed with flavor!
Ingredients
Basic Version
- 1 cup chopped kale leaves
- 1 handful chopped coriander
- 1 handful chopped parsley
- 1 small cucumber, chopped
- Fresh herb mix (less than a handful total):
- chopped basil leaves
- chopped oregano
- chopped mint
- 1 red pepper, chopped
Full Version — Add:
- 1 ripe avocado, sliced
- ½ cup cherry tomatoes, halved
- 2–3 cauliflower florets, pulsed in a blender or food processor into fine “cauliflower flakes”
Dressing
- Salt, to taste
- Juice of 1 large fresh lemon
- 1 tbsp maple syrup (100%, no added sugar or preservatives)
What to Do
- Combine all the salad ingredients (basic or full version) in a large bowl.
- Pour the dressing ingredients on top.
- Mix well — and if you’re using avocado, massage it into the greens. It gives the salad the best flavor and texture!
