Lentils & Tomatoes Soup

This soup will only be truly amazing if you use ripe, flavorful tomatoes — they make all the difference between a good soup and an unforgettable one!
Ingredients
- 2 large sweet potatoes, peeled and sliced
- 1 small potato, peeled and sliced
- 3 large ripe tomatoes, cubed
- 1 handful fresh coriander, chopped
- 1 small onion, peeled and chopped
- 1 cup red lentils
- Filtered water (to cover)
- 1 tbsp avocado oil or coconut oil
Instructions
- In a wide pot, sauté the onion in the oil until soft and golden.
- Add the sweet potatoes, potato, tomatoes, coriander, and red lentils.
- Pour in enough filtered water to cover everything.
- Bring to a boil, then reduce to low heat and cook until the potatoes are tender.
- Blend the soup with a hand blender:
- Blend half of it for a perfect texture — creamy, but with some delicious chunks in every bowl.
- Or blend it fully if you prefer a smooth soup.
Oil-free Option
Skip the sautéing step and simply cook all the ingredients in filtered water until everything is soft.
Still delicious — just lighter!
