Lentils & Tomatoes Soup 



This soup will only be truly amazing if you use ripe, flavorful tomatoes — they make all the difference between a good soup and an unforgettable one!

Ingredients

  • 2 large sweet potatoes, peeled and sliced
  • 1 small potato, peeled and sliced
  • 3 large ripe tomatoes, cubed
  • 1 handful fresh coriander, chopped
  • 1 small onion, peeled and chopped
  • 1 cup red lentils
  • Filtered water (to cover)
  • 1 tbsp avocado oil or coconut oil

Instructions

  1. In a wide pot, sauté the onion in the oil until soft and golden.
  2. Add the sweet potatoes, potato, tomatoes, coriander, and red lentils.
  3. Pour in enough filtered water to cover everything.
  4. Bring to a boil, then reduce to low heat and cook until the potatoes are tender.
  5. Blend the soup with a hand blender:
  • Blend half of it for a perfect texture — creamy, but with some delicious chunks in every bowl.
  • Or blend it fully if you prefer a smooth soup.

Oil-free Option

Skip the sautéing step and simply cook all the ingredients in filtered water until everything is soft.
Still delicious — just lighter!
