Zucchini & Cashews Salad (this is NOT cheese!)

A light, refreshing, and incredibly tasty salad — with a rich, creamy cashew dressing that makes it unforgettable!
Ingredients
For the Salad
- 1 large zucchini, spiralized into “pasta-style” noodles
- 1 handful chopped parsley
- 2 small radishes, chopped
- 1 red pepper, chopped
- 1 cup mixed greens, chopped
- 2 green onions (green parts only), chopped
- Optional: chopped fresh herbs such as oregano, basil, and mint (I used all three — amazing flavor upgrade!)
- Juice of 1 fresh lemon
- Salt, to taste
For the Creamy Dressing
- ¾ cup raw cashews (not salted, roasted, or flavored)
- ¼ cup filtered water (adjust to reach your preferred thickness)
- Salt, to taste
Instructions
- Place all the salad ingredients in a large bowl.
- In a strong blender, blend the cashews, water, and salt until smooth and creamy.
- Pour the dressing over the salad and mix well until everything is coated.
