Zucchini & Cashews Salad (this is NOT cheese!) 

A light, refreshing, and incredibly tasty salad — with a rich, creamy cashew dressing that makes it unforgettable!

Ingredients

For the Salad

  • 1 large zucchini, spiralized into “pasta-style” noodles
  • 1 handful chopped parsley
  • 2 small radishes, chopped
  • 1 red pepper, chopped
  • 1 cup mixed greens, chopped
  • 2 green onions (green parts only), chopped
  • Optional: chopped fresh herbs such as oregano, basil, and mint (I used all three — amazing flavor upgrade!)
  • Juice of 1 fresh lemon
  • Salt, to taste

For the Creamy Dressing

  • ¾ cup raw cashews (not salted, roasted, or flavored)
  • ¼ cup filtered water (adjust to reach your preferred thickness)
  • Salt, to taste

Instructions

  1. Place all the salad ingredients in a large bowl.
  2. In a strong blender, blend the cashews, water, and salt until smooth and creamy.
  3. Pour the dressing over the salad and mix well until everything is coated.
