Quinoa with kale and olives

Fresh Quinoa & Kale Salad
Ingredients
- 1 cup cooked white quinoa (see recipe below)
- 1 ripe tomato, chopped
- 2 green onion stalks, chopped
- 10 pitted Kalamata olives, halved
- 2 cups kale, finely chopped
- 1 tbsp olive oil
- Salt, to taste
Instructions
Place all ingredients in a salad bowl and mix well.
Serve fresh and enjoy!
Plain Quinoa Recipe
Ingredients
- 1 cup white quinoa
- 2 cups filtered water
- 1 tbsp salt
Instructions
- Combine all ingredients in a pot.
- Bring to a boil.
- Lower the heat and cook until all the water is absorbed and the quinoa is soft and fluffy.
