Quinoa with kale and olives



Fresh Quinoa & Kale Salad

Ingredients

  • 1 cup cooked white quinoa (see recipe below)
  • 1 ripe tomato, chopped
  • 2 green onion stalks, chopped
  • 10 pitted Kalamata olives, halved
  • 2 cups kale, finely chopped
  • 1 tbsp olive oil
  • Salt, to taste

Instructions

Place all ingredients in a salad bowl and mix well.
Serve fresh and enjoy!

Plain Quinoa Recipe

Ingredients

  • 1 cup white quinoa
  • 2 cups filtered water
  • 1 tbsp salt

Instructions

  1. Combine all ingredients in a pot.
  2. Bring to a boil.
  3. Lower the heat and cook until all the water is absorbed and the quinoa is soft and fluffy.
