Delicious Low Fat Mushrooms With Veggies

A simple, delicious, and slightly surprising mushroom dish — the natural strawberry jam gives it the perfect touch of sweetness!
Ingredients
- 2 packs of mushrooms of your choice
(If they’re thick, slice them into thinner pieces) - 3 green onions — both white and green parts, sliced
- 1 medium purple onion, chopped or thinly sliced
- 10 cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tbsp natural strawberry jam (100% fruit, no added sugar)
- Salt, to taste
Instructions
- In a large pan, heat the olive oil and caramelize the purple onion for a few minutes until soft and slightly golden.
- Add the cherry tomatoes and green onions. Stir and cook until all the veggies soften.
- Add the mushrooms and mix well.
- Add the strawberry jam and stir until everything is well coated.
- Season with salt and keep on low heat for 2–3 minutes, just until the mushrooms are fully cooked and the flavors blend.
Serve warm — sweet, savory, and so delicious!
