Delicious Low Fat Mushrooms With Veggies



A simple, delicious, and slightly surprising mushroom dish — the natural strawberry jam gives it the perfect touch of sweetness!

Ingredients

  • 2 packs of mushrooms of your choice
    (If they’re thick, slice them into thinner pieces)
  • 3 green onions — both white and green parts, sliced
  • 1 medium purple onion, chopped or thinly sliced
  • 10 cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp natural strawberry jam (100% fruit, no added sugar)
  • Salt, to taste


Instructions

  1. In a large pan, heat the olive oil and caramelize the purple onion for a few minutes until soft and slightly golden.
  2. Add the cherry tomatoes and green onions. Stir and cook until all the veggies soften.
  3. Add the mushrooms and mix well.
  4. Add the strawberry jam and stir until everything is well coated.
  5. Season with salt and keep on low heat for 2–3 minutes, just until the mushrooms are fully cooked and the flavors blend.

Serve warm — sweet, savory, and so delicious!
