Sweet Potato and Chick Peas

A warm, comforting, and completely vegan recipe.
Ingredients
- 1 sweet potato, thinly sliced
- 1 tbsp whole cumin seeds
- 1 large onion, sliced
- 5 ripe tomatoes, chopped
- 1 tbsp olive oil
- Salt, to taste
- ½ small can tomato paste
- 1 can chickpeas, drained and rinsed
Instructions
- Heat the olive oil in a pan and sauté the sliced onion until soft and golden.
- Add the sweet potato, tomatoes, cumin seeds, salt, tomato paste, and chickpeas.
- Gently mix everything together so the flavors combine.
- Cover the pot and bring to a boil.
- Reduce to medium heat and cook until the sweet potatoes are tender.
Serve warm — enjoy this simple, nourishing dish!
