Sweet Potato and Chick Peas



A warm, comforting, and completely vegan recipe.

Ingredients

  • 1 sweet potato, thinly sliced
  • 1 tbsp whole cumin seeds
  • 1 large onion, sliced
  • 5 ripe tomatoes, chopped
  • 1 tbsp olive oil
  • Salt, to taste
  • ½ small can tomato paste
  • 1 can chickpeas, drained and rinsed

Instructions

  1. Heat the olive oil in a pan and sauté the sliced onion until soft and golden.
  2. Add the sweet potato, tomatoes, cumin seeds, salt, tomato paste, and chickpeas.
  3. Gently mix everything together so the flavors combine.
  4. Cover the pot and bring to a boil.
  5. Reduce to medium heat and cook until the sweet potatoes are tender.

Serve warm — enjoy this simple, nourishing dish!
