A crowd favorite: 100% vegan, nutrient-packed, and bursting with flavor!
Ingredients
- 2 ½ cups water
- 1 cup chickpea flour
- 1 cup gluten-free quick oats
- ¾ cup sunflower seeds
- ½ cup pumpkin seeds
- â…“ cup flaxseeds
- ¼ cup whole sesame seeds
- 1/2 teaspoon Himalayan salt
- 2 tablespoons whole raw tahini
Instructions
- Mix the batter: Place all ingredients in a large bowl and mix well. The batter should be liquid in consistency.
- Rest: Let the mixture sit for about 15 minutes so the seeds and oats absorb the liquid.
- Spread: Divide the batter evenly onto 2 large baking trays lined with parchment paper. Spread it out very thinly and press down firmly.
- Bake (first stage): Bake in a preheated oven at 170°C (340°F) for 15 minutes.
- Cut: Remove from the oven, cut into cracker-sized pieces, and return to the trays.
- Bake (second stage): Continue baking for another 20 minutes, or until the edges turn golden brown and crispy.
Result: perfectly crunchy, nutrient-rich crackers — great as a snack on their own, or paired with dips and spreads.
