Lentils Soup

Lentils Soup - low fat, gluten free

One of the best lentil soups ever — rich, cozy, and incredibly satisfying!
Ingredients
- 1 cup green lentils (I soak them for a few hours beforehand)
- 4 garlic cloves, chopped
- ½ onion, chopped
- 1 ½ onions, cut in half
- 2 cups butternut squash, cut into medium chunks
- 2 tomatoes, chopped
- 1 tbsp olive oil
Spices
- Salt, to taste
- 1 tsp curry powder
- 1 tbsp whole cumin seeds
Instructions
- In a wide pot, heat the olive oil and sauté all the onions (the chopped and the halved ones) until soft and golden.
- Add the lentils, garlic, butternut squash, tomatoes, and all the spices.
- Pour in enough water to cover everything, then cover the pot.
- Bring to a boil, then reduce to low heat and cook for about 45 minutes, or until all ingredients are soft.
- Once the soup is ready, keep it on very low heat for an additional 30 minutes to deepen the flavor.
- Adjust the water depending on your preferred consistency — thicker or more soupy.
