Protein pack: Vegan, Gluten free rice with tofu

A delicious, healthy, and protein-rich tofu rice dish — so simple to make and perfect for any day!
Ingredients
- 1 pack firm tofu (350 g), cut into short strips
- ¼ cup tamari (gluten-free) or soy sauce
- 1 tbsp avocado oil
- 2 cups rice
- 4 cups filtered water
- 1 tbsp turmeric
- 1 cup baby spinach leaves
- Optional: salt, if needed
Instructions
- Cook the tofu:
Sauté the tofu in the tamari or soy sauce for a couple of minutes.
Set aside. - Prepare the rice:
In a wide pot, heat the avocado oil and sauté the rice for 2 minutes.
Add the turmeric and mix well.
Pour in the water, cover, and bring to a boil. - Simmer:
Reduce to low heat and cook (covered) until all the water is absorbed and the rice is fully cooked. - Combine:
Add the sautéed tofu and the baby spinach on top of the rice.
Mix well.
Taste — you may not need additional salt, as tamari/soy sauce is usually salty enough. - Final cook:
Let everything cook together for 1 more minute to warm through and soften the spinach.
