Delicious eggplant salad

A simple, fresh, and delicious eggplant salad — perfect as a side dish, spread, or healthy snack!
Ingredients
- 1 large eggplant
- ½ cup parsley, chopped (plus extra for garnish)
- 1 red pepper, finely diced
- Juice of 1 fresh lemon
- 1 tbsp olive oil (or more to taste)
- Salt, to taste
Instructions
- Slice the eggplant in half lengthwise and bake until fork-tender.
- Once cooled enough to handle, peel the eggplant and chop it finely.
- In a bowl, combine the chopped eggplant with parsley, red pepper, lemon juice, olive oil, and salt.
- Mix well, then refrigerate for a couple of hours to let the flavors blend.
Serve chilled — enjoy!
