Delicious eggplant salad

A simple, fresh, and delicious eggplant salad — perfect as a side dish, spread, or healthy snack!

Ingredients

  • 1 large eggplant
  • ½ cup parsley, chopped (plus extra for garnish)
  • 1 red pepper, finely diced
  • Juice of 1 fresh lemon
  • 1 tbsp olive oil (or more to taste)
  • Salt, to taste

Instructions

  1. Slice the eggplant in half lengthwise and bake until fork-tender.
  2. Once cooled enough to handle, peel the eggplant and chop it finely.
  3. In a bowl, combine the chopped eggplant with parsley, red pepper, lemon juice, olive oil, and salt.
  4. Mix well, then refrigerate for a couple of hours to let the flavors blend.

Serve chilled — enjoy!
