The ultimate low fat mushrooms soup

This soup is great for everyone — but especially for those who want to lose weight without feeling hungry!
The entire pot has no more than 500 calories and contains zero oil.
Mushrooms are naturally low in calories yet rich in nutrients. They’re loaded with vitamins, minerals, and antioxidants, and they’re often recommended as part of a healthy and balanced diet. Including mushrooms regularly may support overall well-being and healthy aging.
Ingredients
- About 30 mushrooms (depending on type and pot size)
Mix and match!
Strongly recommended varieties: - King oyster mushrooms
- Cremini mushrooms
- Enoki mushrooms (they even look like noodles!)
- 1 large onion, peeled and halved
- 2 carrots, peeled into very thin strips
(Use a vegetable peeler or mandolin to get ribbon-thin slices.) - 1 large sweet potato, peeled into thin ribbons the same way
- 1 handful fresh dill, chopped
- Salt, to taste
- Optional: 1 tsp cumin for extra warmth and depth
Instructions
- Place all the ingredients in a pot.
- Pour in enough filtered water to fully cover everything.
- Bring to a boil, then reduce to low–medium heat.
- Simmer until the carrots are soft and tender.
Serve warm — nourishing, light, and completely delicious.
