Asian Noodles Salad (with gluten-free option)

Simple, tasty, light, fresh — and healthy!
This noodle salad is full of flavor and comes together in minutes.

Ingredients

For the dressing

  • 1 garlic clove
  • 3 tbsp toasted sesame oil
  • 3 tbsp smooth almond butter (or peanut butter)
  • 3 tbsp fresh lemon or lime juice
  • 2 tbsp soy sauce (or Tamari for gluten-free)
  • 3 tbsp water

For the salad

  • 1 cup cooked vermicelli noodles (or soba noodles)
  • 2 cucumbers, thinly sliced
  • 1 green onion, sliced (white + green parts)
  • ½ cup cooked edamame
  • ¼ cup chopped cilantro leaves

Instructions

  1. Add all the dressing ingredients to a strong blender and blend until completely smooth and creamy.
  2. Place all the salad ingredients in a large bowl.
  3. Pour the dressing over the salad and toss gently to combine.

Serve and enjoy this refreshing, healthy dish!
