Asian Noodles Salad (with gluten-free option)

Simple, tasty, light, fresh — and healthy!
This noodle salad is full of flavor and comes together in minutes.
Ingredients
For the dressing
- 1 garlic clove
- 3 tbsp toasted sesame oil
- 3 tbsp smooth almond butter (or peanut butter)
- 3 tbsp fresh lemon or lime juice
- 2 tbsp soy sauce (or Tamari for gluten-free)
- 3 tbsp water
For the salad
- 1 cup cooked vermicelli noodles (or soba noodles)
- 2 cucumbers, thinly sliced
- 1 green onion, sliced (white + green parts)
- ½ cup cooked edamame
- ¼ cup chopped cilantro leaves
Instructions
- Add all the dressing ingredients to a strong blender and blend until completely smooth and creamy.
- Place all the salad ingredients in a large bowl.
- Pour the dressing over the salad and toss gently to combine.
Serve and enjoy this refreshing, healthy dish!
