Colombian Beans (Fríjoles Colombianos)

Traditional Colombian-style stewed beans — rich, comforting, and full of flavor.
Ingredients
- 2 cups dry red beans or pinto beans (or 3–4 cups cooked beans)
- 1 large onion, chopped
- 2 tomatoes, chopped
- 3 garlic cloves, minced
- 1 carrot, chopped (optional, but adds sweetness)
- 1 small potato, cubed (optional – helps thicken the stew)
- 1 tsp cumin
- 1 tsp paprika
- Salt and black pepper to taste
- Water or vegetable broth
- Fresh cilantro for serving
- Optional: 1 tbsp olive oil for sautéing
Instructions
- Soak the beans overnight or for at least 6 hours. Drain and rinse.
- Cook the beans:
Place soaked beans in a pot and cover with fresh water. Bring to a boil, then simmer until soft (about 1–1.5 hours).
If using cooked or canned beans, skip this step. - Prepare the "sofrito":
In a pan, sauté onion, garlic, tomatoes, cumin, and paprika until fragrant.
(If cooking oil-free, sauté with a splash of water.) - Combine:
Add the sofrito to the pot with the beans.
Add the carrot and potato.
Add more water/broth to cover if needed. - Simmer:
Cook on low heat for 20–30 minutes until thick, creamy, and flavorful. - Season:
Add salt, pepper, and more cumin if needed. - Serve:
With rice, avocado, cilantro, and/or arepas — Colombian style!
