Raw, low-fat, delicious salad



A fantastic source of vitamins and antioxidants — and my favorite choice for lunch!

Fresh, colorful, and incredibly nourishing.



Ingredients

Green Base

Use any combination of greens you like:

  • Chopped kale leaves
  • Lettuce
  • Arugula
  • Spinach

I switch it up daily!

Flavor boosters:

  • 1 tbsp fresh mint, chopped

1 tbsp fresh basil leaves, chopped

(These two herbs elevate the salad to a whole new level.)



Toppings

  • A small piece of fresh beet, chopped

½ yellow pepper, chopped

  • (Red pepper works too — or combine both. Avoid green pepper.)
  • 1 small radish, finely diced

1 tbsp alfalfa sprouts



Dressing

  • 1 ripe avocado, cubed
  • Juice of ½ fresh lemon

Salt, to taste



Instructions

  1. Place your greens in a serving bowl and scatter the chopped herbs on top.
  2. Add the beet, pepper, radish, and alfalfa sprouts.
  3. Add the dressing ingredients: avocado, lemon juice, and salt.

Toss everything together gently until well combined.
