Raw, low-fat, delicious salad

A fantastic source of vitamins and antioxidants — and my favorite choice for lunch!
Fresh, colorful, and incredibly nourishing.
Ingredients
Green Base
Use any combination of greens you like:
- Chopped kale leaves
- Lettuce
- Arugula
- Spinach
I switch it up daily!
Flavor boosters:
- 1 tbsp fresh mint, chopped
1 tbsp fresh basil leaves, chopped
(These two herbs elevate the salad to a whole new level.)
Toppings
- A small piece of fresh beet, chopped
½ yellow pepper, chopped
- (Red pepper works too — or combine both. Avoid green pepper.)
- 1 small radish, finely diced
1 tbsp alfalfa sprouts
Dressing
- 1 ripe avocado, cubed
- Juice of ½ fresh lemon
Salt, to taste
Instructions
- Place your greens in a serving bowl and scatter the chopped herbs on top.
- Add the beet, pepper, radish, and alfalfa sprouts.
- Add the dressing ingredients: avocado, lemon juice, and salt.
Toss everything together gently until well combined.
Fresh, vibrant, and delicious — enjoy!
