Super Delicious Granola Bar (or balls)

Nothing beats these homemade granola bars (or balls!) — super delicious, very healthy, and made from real, whole ingredients.
Shape them however you like and enjoy anytime!
Ingredients
- 1 cup Medjool dates, pitted
- ¼ cup pure maple syrup (no added sugar) or agave
- ¼ cup natural peanut butter or almond butter (100% nuts — I prefer almond butter since it’s healthier)
- 1 spoon raw, unsalted pumpkin seeds
- 1 cup unsalted almonds
- 1 ½ cups rolled oats
Instructions
- Toast the dry ingredients:
Spread the oats, almonds, and pumpkin seeds on a baking sheet and toast in a 350°F (175°C) oven for 5–10 minutes.
Keep an eye on them so they don’t burn! - Blend the dates:
Process the dates in a food processor or strong blender for about 1 minute, until a sticky, dough-like consistency forms. - Combine:
Place the oats, almonds, pumpkin seeds, and date paste in a large mixing bowl. - Warm the syrup + nut butter:
In a small saucepan, gently heat the maple syrup and peanut butter (or almond butter) over low heat. Stir until smooth, then pour over the oat mixture.
Mix thoroughly, breaking up the date pieces so they distribute evenly. - Shape your creation:
Transfer the mixture to a small tray.
- For bars: Press the mixture down firmly until evenly flattened.
- For balls: Take small portions and roll them with your hands into bite-sized balls.
- Set:
Refrigerate for about 20 minutes to firm up. - Final step (for bars):
Once set, remove the flattened mixture from the tray and cut into bars — any size you want!
(I usually get about 10 regular-size bars.) - Storage:
Keep bars or balls in an airtight container for up to several days.
