Divine mushrooms soup with truffle oil

A perfect dish for a cold night — warm, comforting, and deeply flavorful.
Simple to make, yet tastes luxurious thanks to the truffle!
Ingredients
- 1 onion, chopped
- 400 g cooked udon noodles
- About 30 white champignon mushrooms, sliced
- 100 g shaved Italian black truffle mushrooms in olive oil (jarred)
- 400 ml coconut milk
- Salt, to taste
- Optional: fresh coriander leaves for garnish
Instructions
- In a wide pan, heat 1 tbsp of the truffle oil from the jar. Add the chopped onion and sauté until golden and fragrant.
- Add the mushrooms, cooked udon noodles, truffle mixture, coconut milk, and salt. Stir well to combine.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, allowing the flavors to deepen.
- Serve warm and garnish with a few fresh coriander leaves if you like.
