Divine mushrooms soup with truffle oil

A perfect dish for a cold night — warm, comforting, and deeply flavorful.
Simple to make, yet tastes luxurious thanks to the truffle!

Ingredients

  • 1 onion, chopped
  • 400 g cooked udon noodles
  • About 30 white champignon mushrooms, sliced
  • 100 g shaved Italian black truffle mushrooms in olive oil (jarred)
  • 400 ml coconut milk
  • Salt, to taste
  • Optional: fresh coriander leaves for garnish

Instructions

  1. In a wide pan, heat 1 tbsp of the truffle oil from the jar. Add the chopped onion and sauté until golden and fragrant.
  2. Add the mushrooms, cooked udon noodles, truffle mixture, coconut milk, and salt. Stir well to combine.
  3. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, allowing the flavors to deepen.
  4. Serve warm and garnish with a few fresh coriander leaves if you like.
