Vegan Indian Dish (Aloo Gobi)

I absolutely love Indian food, but many traditional dishes contain meat or dairy.
This version is 100% vegan — rich, flavorful, and incredibly satisfying.
Serve it with rice for the perfect meal!
Ingredients
- 4 tbsp olive oil
- 1–2 jalapeño peppers, halved (optional — or replace with any chili pepper depending on your preferred spice level)
- 1 tbsp cumin seeds
- 1 small onion, chopped
- 1 small cauliflower, cut into small florets
- 2 medium sweet potatoes or regular potatoes, peeled and diced
- 2 cups green peas (fresh or frozen)
- 3 tbsp garlic-ginger spread (recipe below)
- 1 tbsp garam masala
- ¼ tbsp turmeric
- Salt, to taste
- 2 tbsp tomato paste
Instructions
- Heat the olive oil in a wide pan. Add the jalapeño halves and sauté for 1–2 minutes.
- Add the cumin seeds and cook for another minute until fragrant.
- Stir in the onion, cauliflower, sweet potatoes (or potatoes), and peas. Cook for about 5 minutes, until the onion starts to turn golden.
- Add the garlic-ginger spread, garam masala, turmeric, salt, and tomato paste. Mix well.
- Pour in enough water to cover the vegetables about halfway.
- Bring to a gentle boil, then reduce the heat and simmer for 10–15 minutes, or until the potatoes and cauliflower are tender.
Serve hot over rice — so delicious!
Garlic-Ginger Spread (super simple!)
- 10 garlic cloves
- About 5 cm (2 inches) fresh ginger, peeled
- ¼ cup olive oil
Blend until smooth. Store in the fridge and use anytime you want to instantly upgrade your cooking!
