Vegan Indian Dish (Aloo Gobi)



I absolutely love Indian food, but many traditional dishes contain meat or dairy.
This version is 100% vegan — rich, flavorful, and incredibly satisfying.
Serve it with rice for the perfect meal!

Ingredients

  • 4 tbsp olive oil
  • 1–2 jalapeño peppers, halved (optional — or replace with any chili pepper depending on your preferred spice level)
  • 1 tbsp cumin seeds
  • 1 small onion, chopped
  • 1 small cauliflower, cut into small florets
  • 2 medium sweet potatoes or regular potatoes, peeled and diced
  • 2 cups green peas (fresh or frozen)
  • 3 tbsp garlic-ginger spread (recipe below)
  • 1 tbsp garam masala
  • ¼ tbsp turmeric
  • Salt, to taste
  • 2 tbsp tomato paste

Instructions

  1. Heat the olive oil in a wide pan. Add the jalapeño halves and sauté for 1–2 minutes.
  2. Add the cumin seeds and cook for another minute until fragrant.
  3. Stir in the onion, cauliflower, sweet potatoes (or potatoes), and peas. Cook for about 5 minutes, until the onion starts to turn golden.
  4. Add the garlic-ginger spread, garam masala, turmeric, salt, and tomato paste. Mix well.
  5. Pour in enough water to cover the vegetables about halfway.
  6. Bring to a gentle boil, then reduce the heat and simmer for 10–15 minutes, or until the potatoes and cauliflower are tender.

Serve hot over rice — so delicious!

Garlic-Ginger Spread (super simple!)

  • 10 garlic cloves
  • About 5 cm (2 inches) fresh ginger, peeled
  • ¼ cup olive oil

Blend until smooth. Store in the fridge and use anytime you want to instantly upgrade your cooking!
