Super Delicious Veggie Patties

These patties are SOOOO good!
Tasty, healthy, and packed with greens — just make them and enjoy!
Ingredients
- 2 tbsp + 5 tbsp olive oil
- 1 onion, chopped
- 10 Swiss chard leaves, chopped
- 1 pack baby spinach, chopped
- 1 medium zucchini, peeled and chopped
- Salt, to taste
- Black pepper, to taste
- 2 garlic cloves, chopped
- 2 tbsp flour
- 2 cups cooked sticky rice (sushi rice works perfectly)
For serving: tahini (highly recommended!)
Instructions
- Cook the vegetables:
In a wide pan, heat 2 tbsp olive oil. Sauté the chopped onion until golden.
Add the Swiss chard, spinach, zucchini, salt, pepper, and garlic. Cook for a few minutes until the greens soften. - Combine:
Stir in the cooked sticky rice and mix well so everything comes together. - Form and cook the patties:
Heat 5 tbsp olive oil in a separate wide pan.
Shape the mixture into patties and fry for about 3 minutes per side, until lightly browned. - Alternatively: Brush the patties with olive oil and bake at 375°F (190°C) for 15–20 minutes until golden.
- Serve:
Enjoy warm, ideally with a generous drizzle of tahini!
Optional Tahini Sauce
Blend together:
- Tahini paste
- Fresh lemon juice
- Salt
- Water
Start with small amounts of each and adjust gradually—you’re aiming for a creamy, pourable consistency and balanced flavor.
