Leftover Rice with vegetables!!!

You’ll be surprised how delicious leftover rice can be!
Use any vegetables you have in the fridge — this dish is flexible, easy, and super tasty.
Ingredients
- 1 tbsp olive oil
- ½ purple onion, chopped
- 5 small colorful peppers (or 2 large), thinly sliced
- A handful of fresh coriander, chopped
- 1 carrot, grated
- 1 cup cooked leftover rice (mine was from the day before)
- Salt, to taste
Instructions
- Heat the olive oil in a wide pan and sauté the chopped onion until soft and fragrant.
- Add the peppers, coriander, carrot, and salt.
- Cook on low heat until all the vegetables are tender.
- Add the leftover rice. Before adding, make sure to separate any clumps — using your hands works best!
- Stir well and keep cooking on low heat until everything is warmed through and well combined.
Serve and enjoy!
