Leftover Rice with vegetables!!!



You’ll be surprised how delicious leftover rice can be!
Use any vegetables you have in the fridge — this dish is flexible, easy, and super tasty.

Ingredients

  • 1 tbsp olive oil
  • ½ purple onion, chopped
  • 5 small colorful peppers (or 2 large), thinly sliced
  • A handful of fresh coriander, chopped
  • 1 carrot, grated
  • 1 cup cooked leftover rice (mine was from the day before)
  • Salt, to taste

Instructions

  1. Heat the olive oil in a wide pan and sauté the chopped onion until soft and fragrant.
  2. Add the peppers, coriander, carrot, and salt.
  3. Cook on low heat until all the vegetables are tender.
  4. Add the leftover rice. Before adding, make sure to separate any clumps — using your hands works best!
  5. Stir well and keep cooking on low heat until everything is warmed through and well combined.

Serve and enjoy!
