Okra in tomato sauce


A simple, delicious, and healthy dish that pairs beautifully with rice or quinoa.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, peeled and sliced into rings
  • 3 ripe tomatoes, diced
  • 1 small can tomato paste
  • 1 pack fresh okra
  • Water
  • Salt, to taste

Instructions

  1. Heat the olive oil in a wide pan over medium heat. Add the sliced onion and sauté until golden with a slight char.
  2. Add the diced tomatoes, tomato paste, and salt. Stir well to combine.
  3. Pour in enough water to cover the mixture and stir again.
  4. On a cutting board, gently trim the tops of the okra. Be careful not to cut too deeply, or they may open during cooking.
  5. Add the okra to the pan, bring everything to a gentle boil, then reduce heat and simmer until the okra is tender.
  • Cooking time will vary depending on the type of okra and your heat level.
  1. Make sure the okra is fully soft before serving.
