Okra in tomato sauce

A simple, delicious, and healthy dish that pairs beautifully with rice or quinoa.
Ingredients
- 1 tbsp olive oil
- 1 medium onion, peeled and sliced into rings
- 3 ripe tomatoes, diced
- 1 small can tomato paste
- 1 pack fresh okra
- Water
- Salt, to taste
Instructions
- Heat the olive oil in a wide pan over medium heat. Add the sliced onion and sauté until golden with a slight char.
- Add the diced tomatoes, tomato paste, and salt. Stir well to combine.
- Pour in enough water to cover the mixture and stir again.
- On a cutting board, gently trim the tops of the okra. Be careful not to cut too deeply, or they may open during cooking.
- Add the okra to the pan, bring everything to a gentle boil, then reduce heat and simmer until the okra is tender.
- Cooking time will vary depending on the type of okra and your heat level.
- Make sure the okra is fully soft before serving.
