Super Delicious Mushrooms with Coconut Cream



Probably one of the tastiest dishes I’ve ever eaten!!
Creamy, rich, and full of umami—this mushroom dish is incredibly satisfying.

Ingredients

  • 1 medium onion, sliced into rings
  • 1 tsp olive oil (or any preferred oil)
  • A variety of sliced mushrooms — use what you have!
    I used 1 large lion’s mane mushroom (soooo good—I could honestly make the whole dish from it!) and about 25 shiitake mushrooms.
  • 1 can coconut cream
  • 1 tbsp all-purpose flour
  • 1 tbsp almond flour
  • Salt, to taste
  • For garnish: thinly sliced green onion (green part only)

Instructions

  1. Heat the oil in a wide pan over medium heat. Add the sliced onion and sauté until golden.
  2. Add the mushrooms and stir, allowing them to soften and release their aroma.
  3. Add the coconut cream, both flours, and salt. Mix well to create a smooth, creamy sauce.
  4. Bring the mixture to a gentle boil, then reduce the heat and simmer for about 15 minutes.
  • Cooking time will vary depending on the mushrooms you’re using and your heat level.
  1. Taste and adjust seasoning if needed.

Top with green onion before serving—and enjoy every bite!
